Muffin Basics
Muffin
Tins should be filled about 2/3 full. This gives a nice balance of
tops and bottoms. Overfilling can result in muffins flowing over the
top of the pan. It makes it hard to get the muffins out and can be a
mess to clean.
If
your oven has a top brown element, that will help give your muffins
a crispy upper crust. Be advised, a gas oven with a Broiler on top
can turn your muffins into charcoal in a couple of minutes.
Baking
times on the bag are suggestions and as ovens vary, so will the
correct time. You can test for doneness by inserting a toothpick
into the center of a muffin. When the toothpick comes out clean, the
muffins are ready.
Variations
Sara's Wholesome Muffins are delicious by themselves, but don't let that stop you from dressing them up a bit.You can add up to ½ cup of fruits nuts or whatever to the contents of one bag to create your own sensations. Some of our favorite combinations are
Corn with Blueberry
Bran with Chocolate Chips
Bran with Raisins
Bran with Craisins
Banana Muffins- one mashed ripe (or overripe) banana added to the mix.
Reduced Fat- You can safely leave out ½ the recommended amount of oil. The muffin will be a bit less springy than usual, but, hey, it wouldn't be a diet if you didn't give up something. Or use applesauce instead of oil and give up nothing.
